Italians have got it sussed when it comes to amazing food,pizza, gelato, risotto and our beloved, pasta. A firm favourite with us British mums, pasta makes an appearance, in some form or another, most weeks with a good old spag bol or lasagne for a supper time win with the kids.

When we were invited to Trattoria at Souk Madinat Jumeirah for a morning of pasta making, we were there faster than you can say tiramisu to try our hand at this culinary art. Trattoria is one of our favourites when it comes to traditional rustic dining. The restaurant itself is decorated in a traditional Mediterranean style adding to the authentic Italian feel. On arriving, we were welcomed with a delicious breakfast of coffee, juices and freshly baked pastries to whet our appetite and were then taken through to our individual workstations. With masterclasses limited to 10 people, each workstation allowed for social distancing and was equipped with everything you would need to create your own pasta dish, including an apron and even a chef’s hat to complete the look.

The hour-long session was led by the restaurants Head Chef, Antonio Lacovelli who has over 20 years experience, assisted by his team, they took us through a step-by-step guide to making a delicious Spinach and Ricotta Ravioli, followed by a demonstration of the accompanying Datterino tomato sauce. Chef Antonio demonstrated each part of the process allowing enough time for us to follow each step and there was always one of the team on hand to help with any of the trickier parts – the rolling requires a bit of welly.

Once we’d finished mixing, kneading, rolling and cutting, we dusted the flour from our aprons and settled down to enjoy an absolutely scrumptious three-course lunch. There was Bruschetta al Pomodoro and Crostini all Toscana to start, swiftly followed by sharing-style mains consisting of the dish we prepared during the masterclass alongside a true crowd pleaser, and Trattoria special, Tagliatelle al Ragu. If you’ve still room for afters there’s Trattoria’s signature Tiramisu for dessert. This was such a lovely way to round off the morning and gave us the opportunity to sit and chat with our fellow apprentices, discussing the intricacies of pasta-making but really laughing about how well we felt we did, or didn’t do. Regardless of our culinary mastery it was such a fun morning and we all agreed it would be something we would definitelylike to try again.
